It has been said that the Mughal Emperors introduced Kulfi to the Indian sub continent using ice brought down from the Himalayas.
Sometimes whilst I push my Tricyle over the Hills of Leeds, I feel I am closer to perhaps the origins of original Kulfi production than most.
Kulfi is a deliciously creamy, rich, exotic frozen dessert. It has its origins in Southern Asia. Its best known these days as a dessert eaten after a meal in a Indian Restaurant.
There are a few companies out their mass producing Kulfi, putting vegetable fat and air into it and if that's what you want just do a google search and speak to them.
We aim to produce a traditional tasting Kulfi. With 2 awards in our 1st year.One of which was regional, one national. And a 2nd year where we out performed all other Yorkshire Ice cream producers ( who entered) in terms of having the highest star rated product and also the most stars issued we think we have started out well on that aim.
Kulfi is similar to ice cream but has no air whipped into it and has a much creamier and denser texture. This means patience is needed as it takes a little longer to defrost - but we believe its worth the wait.
When selling at Farmers Markets we noticed a number of people asking for Dairy Free Products. We worked on some recipes and found we liked the ones which were just fruit, water and sugar best.
We also had requests for ice cream and whilst we have not sold these in large volumes we will have them should you require special orders.
